The Gist

Breakfast: Oatmeal bars

Lunch: Kale, bean, potato, and sausage soup and kale salad

Snacks: Trader Joe’s white cheddar popcorn. My favorite!

Dinner: Fattoush*, beef and broccoli with fried cauliflower rice

  • Kale (2 bunches
  • Potatoes (1 lb)
  • Bananas
  • Salad veggies (carrots, tomato)
  • Broccoli (1 head)
  • Carrots (1 bunch)
  • Onion (1 large white)
  • Garlic
  • Lemon
  • Loose sausage (8 ounces)
  • Chicken (1 lb)
  • Flank steak (1 lb)
  • Eggs
  • Coconut milk
  • Feta cheese
  • Canneli beans (1 can)
  • Chickpeas (1 can)
  • Pita bread
  • Rolled oats
  • Vegetable stock (64 oz)
  • Frozen cauliflower rice
  • Frozen peas
    • Total: $79.23, from Whole Foods and Trader Joe’s (sadly our farmer’s market is closed until May!)

Sunday night: Fattoush

Monday night: Fattoush

Tuesday night: Beef and broccoli with fried cauliflower rice

Wednesday night: Dinner out (trivia night!)

Thursday night: Beef and broccoli with fried cauliflower rice

 

*For the fattoush – you can add whatever veggies you like, I only used cucumbers for this week.
